Oven Baked Pancake

I am so excited to share some yummy goodness with you all today!

A couple months ago we took a trip to visit some family and stayed with my amazing cousin Karen.  She is one of those moms that puts other moms to shame.  Not only is her house gorgeous and filled with so many unique personal touches, it is also one of those places where you just feel right at home.  It was almost as good as being at Disneyland for the kids (she even has a pull down attic space just for her kids to play)!  You might remember her from this Christmas post in which I talked about the most amazing Toffee ever created!! 

She made us a breakfast that was to die for and I have not been able to get it out of my head!  She has been kind enough to share her Aunt Joanie's recipe with me and to spread to my amazing readers!!


Oven Baked Pancake
6 T. butter
6 eggs
1 1/2 cup flour
3/4 t. salt
2 1/4 cup milk

Preheat the oven to 450 degrees. In a 9 x 13 baking dish, in the oven, melt the butter. While the butter is melting (keep your eye on it!), blend all the other ingredients together in a blender. When the butter is melted, carefully pour the batter into the pan. Bake for 15 minutes, then decrease the heat to 400 (without removing the pancake) and bake for 10 minutes more. Serves about 5 hungry kids! :)

My girls were so excited to make this because they always talk about how much they liked "Aunt Karen's" breakfast and that we never have anything that good...




Now how easy is that!  Doesn't this look amazing!!


I topped mine with powdered sugar and berries...I believe this is what will be served in Heaven ;-)

Superbowl Food Favorites

I am cooking away today making two of my favorite dips for a Superbowl party tonight and I don't want to be selfish and keep these fabulous recipes all to myself ;-)

The first is a dip that my sister has been making for years and I absolutely LOVE it! It is a Buffalo Chicken Dip  and it has been a huge hit at every get together...

The best part about this dip is that it is so simple and cheap to make!

My second favorite dip is Spinach Artichoke dip, which is usually loaded with calories.  That was until I found this Skinny Spinach Artichoke Dip!!  What can be better than this?!  I love to pair mine with chips and some good baguette bread YUM!

I have been in a real rut lately when it comes to cooking.  I really love to cook, but I am so sick of making the same things that I don't feel like cooking a thing!  I have decided that I need to spend more time looking at Pinterest to find some new recipes to try.  So here they are :-))

Is there anything else to say, other than YUM!?


Spicy Shrimp Lettuce Cups



I hate Zucchini, but I love Zucchini sticks in restaurants.  I definitely need to try this at home so I can get some veggies in me ;-)



I love Chinese and Japanese food, but am completely stuck in a rut over the stir fry recipes I make.  I can't wait to try this!
